My family would always make Root Beer from extract for family reunions. We would carbonate it with dry ice and it was so good. We'd put it in a big water cooler with a spout so it was easy to get. Careful not to seal anything with dry ice, it'll explode. We would put the lid on loosely so the gases could escape. From my experience the Root Beer never foamed like you'd get using yeast.
